The entire state joined Chief Minister Bhupesh Baghel today to taste the traditional Chhattisgarhi cuisine Borey Basi.
Baghel has given a call to enjoy the state’s traditional food as a mark of honour to the labourers on International Labour Day observed today. Besides Baghel and his cabinet colleagues, the bureaucrats and the man standing in the last row of the society enjoyed Borey Basi.
The recipe is very popular in most rice eating states of India. In Chhattisgarh, it is known as Borey Basi. In the local dialet, “Borey” means soaked and “Basi” means leftover. The Assamese call it “poita bhat.” It is a very nutritious and healthy dish that keeps cool and helps detoxify in addition to being very filling and satisfying.
The dish is a natural coolant that is also a remedy for ulcers in the stomach as it reduces acidity. It also keeps skin radiant and glowing and is rich in iron and calcium and vitamin B.
The dish is prepared by keeping cooked rice soaked overnight in an earthen pot. When soaked overnight it ferments slightly thus increasing the vitamin content. It can be taken as breakfast, lunch or dinner.
Baghel enjoyed the food with the labourers in the sideline of a state-level labour conference organized in the BTI ground here today. The Chief Minister served the side dishes that included Dahi, Mango Athan, Libri, Bijari, Papad, Gondli, Dahi Mirchi with Amari and Lal Bhaji.
Baghel said he was feeling proud that Borey Basi had become trendy overnight. “People are coming forward to enquire about the cuisine while many turn up to taste it,” he added.
